That depends on the translation and interpretation. For instance, in the version of the Poetic Edda I've got, in the
Voluspa the seeress says "I know everything, Odin, where you hid your eye in the famous well of Mimir." So it can be interpreted that the eye still exists serving as a conduit, and so in effect, still "sees".
