and Im wondering what race and class who is easiest for an Newbe!?

But I suggest a warrior, or battlemage Dark Elf/Nord to start with.

Aye, somekind of fighter warrior/mage would be easiest. Make sure you have restoration skill if you want to make things easier.
Dark elf, nord and also redguard are not so easiely killed.
