Right, when I was delivering the ring that the gray fox sends you after the ultimate heist. I arrived at Castle Anvil at 6 p.m. I thought if I hurried I could make it. The Countess was heading towards her room, when I passed the hall tot he audience chamber, BAM, the place froze. I reloaded my past file and it happened again. I fast traveled and came back. This time, it was 9 a.m. All of the guards where in their same shift as 6 p.m. but this time they where moving. When I went to the audience chamber, the countess was still on her way to her chambers, and she said "You will have to tell me when I am holding my morning audience. Now, her scheduel is completly messed up because of a glitch that caused the castle to freeze. I found it quite funny and weird. Did any of this happen to anyone else?

this did happen to me, but not in castle anvil. It happened in anvil as i was doing a quest, i cannot remeber what, and i was waiting for someone to get out of his house so i could talk to him. I waited for 24 hours twice, and he never came out. Then i looked around and no one was moving, as if time had stopped. if i tried to interact with them they would not respond. I just loaded a save point and the glitch never happened again.

I'm not exactly sure if that happened to me. The one Thieves' Guild mission you have to create a forged paper from 'The Stranger' and he told me it would only take a day. I ended up waitng probably for over a week before I was fed up and went onto other stuff, the next time I tried it, it worked at least. Now if only my Fighter's Guild quests givers would give me quests...
