I've had that game for a long while now, (since before any expansions came out) and I've played online once. All that happened were a bunch of people ran around and killed stuff. I probably joined a bad server because I've heard the multiplayer is excellent.
Sounds like you joined one of the more action-oriented servers. Some of those can turn out to be rather interesting as well, as long as you don't expect much else than a multitude of players roaming the world, looking for creatures to mindlessly slaughter, only to afterwards move on to the next area. Usually, these servers are all to be found under the
Action,
PW Action and
Melee game type categories in the server list.
Then there are the servers that exist solely for Player vs Player and Team vs Team gamestyles. The
Arena and
Team categories hold these servers.
Last but not least, there are the servers focusing on the 'R' part of RPG.
Story,
Story Lite,
PW Story,
Social(mostly) and of course
Role Play.
Still, even though you choose a server from your preferred category, there's no guarantee that you'll get what you expected. Sometimes you're in luck, and you'll find a server that actually lives up to its description and proves to come with a decent community. If you're really lucky, you'll find yourself frequenting the server months, maybe even years, later.
Personally, I've only found a few servers that I would consider worthy of visiting more often. To be honest, I'd have to say it's
usually the servers with small player communities that are the good ones.
Anyway, enough of that. Myself, I'm still an avid player of the game, even after all this time. I've found myself taking short breaks every now and then, only to return to the game once again. The game just offers too much to do. The official campaigns (they are decent), the community modules, the toolset (which offers a lot of options, just like the Morrowind Construction Set), the Persistant Worlds (basically servers, each with its own different gameworld) and then there's always the experimenting with character builds (personal favorite).
